Kapistoni Danakharuli Qvevri 2022

Kapistoni Winery is a small, young winery from the Georgian province of Kartlia, close to the capital Tbilisi. Kapistoni is the life's work of Niko Chochishvili. He immigrated from the United States in 2010. The winemaking was then first a 'side job', but Niko is very enthusiastic. Winemaking is his calling. In 2017 he had a wine cellar built and since then his passion has been his (life) work. He makes natural wines in qvevri'. They are clean and pure. He uses grape varieties that are rare even in Georgia.

Terroir The grapes are harvested by hand in the Gori region of the Kartli province of Georgia. The vineyard is located at an altitude of 750 meters with a lot of clay in the soil.
Harvest method handpicked
Yield per hectare 8 tons per hectare.
Vineyard treatment This is a natural wine made from organically treated vineyards.
Vinification The grapes ferment in 7 to 10 days in the qvevri with the skins. After the first fermentation, the skins are separated from the wine. Then the malolactic fermentation takes place which lasts about 15 days. After that, the wine matures for another 6-8 months in the Qvevri.
Impression Ruby red. Smells and tastes of cherries, blackcurrants, blackberries and mint liquorice. Ripe and smooth.
