Terroir The Cabernet Sauvignon is planted in one vineyard in the Kondoli region in the Georgian province of Kakhetia. The climate here is temperate, tending to subtropical, with hot summers and moderate winters. The bottom consists of brown earth and old river deposits.
Harvest method handpicked
Vinification The completely frozen grapes were picked at the beginning of December, when the outside temperature dropped to -9°C. The grapes were harvested by hand early in the morning in small boxes. Damaged grapes were removed by hand upon arrival. The remaining fruit was gently pressed in the basket press. The fermentation took place for 2 months in stainless steel tanks at a controlled temperature of 16-18°C. The wine was then kept cold for 6 months at around 0°C. After light filtration, the wine was bottled and aged in the bottle for six months before leaving the cellar.
Impression Pink in color. Smells like strawberry, candied currants and blackcurrant. Also lots of berries in the taste of the thick, sweet juice. With more than enough acidity to keep it lively and drinkable.

Did you know? At -9°C the water in a grape is frozen. Not the sweet nectar. That nectar contains the flavor components and is the only ingredient of the wine. That is why the wine is so intense and complex in taste.
