Terroir | This is a so-called single vineyard wine. The grapes come from the winery's own vineyard in the Kondoli sub-region in the Georgian province of Kakhetia. The climate here is temperate, tending to subtropical, with hot summers and moderate winters. The bottom consists of brown earth and old river deposits. |

Vinification | The Mtsvane and Kisi grapes were 'green harvested' in early August to reduce the grape yield to 7 tons per hectare. As a result, the quality of the remaining grapes increases as well as the concentration of the fruit. At the end of September, the grapes were harvested by hand in small boxes. On arrival they are sorted by hand, cooled and pneumatically pressed. After settling of the juice, the fermentation was carried out with wild yeasts at a temperature of 13-14°C, in order to preserve the natural aromas. After fermentation, the wine matured with the yeasts for six months, with regular stirring for flavor and aroma integration. There was minimal filtering and four months aging in the bottle. |
Impression | Aromas of citrus, ripe apple, pear, white flowers, anise and mint. They return on the palate, along with hazelnut and melon. Medium body. |
