Vinification | In the first half of September, the Mtsvane grapes are picked by hand in the Kondoli vineyards. After de-stemming, they are cooled to 4-6°C and kept on the skin for 8 hours, after which they are gently pressed in a pneumatic press. The fermentation takes place for about 1 month in stainless steel tanks at 14-15°C. After the fermentation is complete, the wine is transferred to another tank for further refinement. The wine is bottled in March. |
